Made from the nectar of the Indian Borage (locally referred to as Chichiri), this honey had a delicate fragrance and is an almost clear, pale yellow in colour. Chichiri grows wild along the snowline of the northernmost slopes of Himachal’s hills and mountains, at an altitude of over 8,000 feet. It is notably rare and highly prized, as the Chichiri flower produces nectar erratically, allowing for a harvest only once every three to four years.

It is highly valued for its medicinal properties, specifically when it comes respiratory disorders like asthma. It can also be used to relieve sore throats and general pain and is frequently described as helpful in easing insomnia. The plant itself has other medicinal properties as well—for instance, a decoction of its leaves can be made as a rejuvenating tonic.
